Crunchy Kale Chop Salad

This colorful spring salad is a great way to enjoy some greens while getting your crunch on. It takes about 10 minutes to make, which is perfect when you’d rather be playing outside than in the kitchen making food.

2 bunches curly green kale

1 large carrots

1 small red beet

¾ c. cashews

½ c. raisins

2-3 T. olive oil

1 T. apple cider vinegar

Sea salt

Fresh ground pepper

Rinse and destem the kale. Chop it into smaller, bite-sized leaves, place it in a bowl, and thoroughly knead with fine sea salt. Using a vegetable peel, create shavings from the carrots and beets and throw into the bowl. Chop cashews and add them in with the raisins. Toss altogether with oil and vinegar, and top with fresh ground pepper. For best results, chill in fridge for a couple hours before serving. For more protein, you can roll up this salad in some slices of organic turkey.

Chef to Plate Celiac Awareness Project

May is Celiac Awareness Month!

The Gluten Intolerance Group of North America, one of the foremost leaders in America supporting folks with gluten intolerance and Celiac and raising public awareness of these topics, unrolls their 2nd Annual Campaign. The Chef to Plate Campaign helps spread awareness of Celiac Disease and gluten intolerance to restaurants through dining. They estimate this simple campaign reached 1.6 million people last year! Ways you can participate:

  1. Send the GIG restaurants with gluten-free menus you frequent and trust. They will send them an invitation to participate. Click HERE to sign up your restaurant. Or send complete information to rebecca.powell@gluten.net to recommend your favorite restaurants with gluten-free menus.
  2. Help distribute the campaign materials to restaurants in your area. GIG will send you all the information and the participating restaurants. All you have to do it hand-deliver the materials to the restaurant before May 1st. Click HERE to sign up.
  3. Spread the word about this campaign to the public.

Food that Inspires

First rule:  Abandon all rules. There’s nothing inspiring about shutting down your imagination.

Second rule:  Take risks. Don’t be afraid to burn or season improperly or marry two seemingly incompatible items. Befriend a neighborhood dog if that helps give you license.

Third rule:  If you want food that brightens your mood, play with color and texture. In the kitchen you are the culinary artist, and shapes and shades breathe life into your experience.

Fourth rule:  Let your senses guide you. Your eyes, nose, hands and tongue will give you feedback.

Fifth rule:  Pay attention to your food while you eat like it were a witty friend telling you a great story.
